Honey Gingerbread
  • 1 cup margarine
  • 2 cups honey
  • 1 cup fine white sugar
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1 tsp nutmeg
  • 1 tsp cloves
  • 2 tbs cocoa
  • 7 cups flour
  • 2 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs

Melt margarine in saucepan over low heat. Add honey, sugar, spices, and cocoa and stir until sugar has dissolved. Cool mixture.

In a large bowl sift together flour, baking powder, and salt. Add eggs to cooled mixture and knead until smooth.

Divide dough into thirds and roll out on wax paper or parchment.
