- 2 1/2 cups flour
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1 tsp baking soda
- 1/3 cup margarine or butter
- 1/2 cup light brown sugar
- 1/2 cup molasses
- 1/2 cup light corn syrup
- 2/3 cup hot water
- 2 eggs, beaten
Stir flour, spices and baking soda in a bowl. Put margarine or butter, sugar, molasses and light corn syrup into a pan and stir until melted. Pour the melted syrups into the dry ingredients, together with the water and eggs. Mix well.
Pour the batter into a lined and greased 9 inch square shallow pan. Bake in a pre-heated oven at 350F for 35 - 40 minutes. Keep for one day before cutting into squares to serve.
