- 2 cups all purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground ginger
- 1 1/2 teaspoons ground cinnamon
- 3/4 teaspoon ground cloves
- 3/4 cup unsalted butter, melted and cooled
- 1 cup sugar, plus more for rolling
- 1/4 cup molasses
Mix together flour, baking soda, salt, ginger, cinnamon and cloves in a medium bowl.
Combine butter, 1 cup sugar and molasses. Drop in egg and mix until blended. Gradually stir in the flour mixture, mixing to form a soft dough. Cover with plastic wrap and chill in the refrigertor for 2 hours or overnight.
Roll dough into walnut sized balls, roll in sugar and arrange on a greased baking pan. Bake at 350F for 10 to 12 minutes. Remove the cookies from the baking sheets to wire racks for a few minutes before serving them - letting the sugar solidify.
