• 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 2/3 cup unsulphured molasses
  • 2/3 cup milk

Preheat oven to 350F. Grease and flour 9 X 5 loaf pan. In a bowl, measure the flour, baking powder, baking soda, salt, ginger and cinnamon; set aside.

In a mixing bowl, beat the butter and sugars until light and fluffy on medium. Beat in the egg and continue beating until combined. Combine the molasses and milk in a small bowl. Remove the butter mixture from the mixer. Alternate adding the flour and milk mixture to the butter mixture. Fold the batter together with spatula.

Pour the batter into your prepared loaf pan. Bake for approximately 50 minutes or until done. Let cool in pan.
