Gingerbread Brownie Recipe

2 1/4 cups flour
2 tbsp cocoa powder
2 tsp baking soda
2 tsp ground ginger

2 tsp ground cinnamon
1/2 cup butter or margarine
1 cup sugar
2 eggs, separated
1 1/2 cups molasses
7 oz buttermilk

Frosting: 7 oz chocolate or chocolate-cake covering

Mix flour, cocoa powder, baking soda and spices into a bowl. In another larger bowl, cream butter or margarine and sugar. Beat in egg yolks and molasses. Alternately, fold in the dry ingredients and the buttermilk into the larger bowl. Whisk the egg whites until stiff and fold them into batter.

Spread batter in a greased 13 X 9 shallow oblong baking pan. Bake at 350F for 25 - 30 minutes. Cool cake before turning out onto cake rack to cool thoroughly.

Melt the chocolate in a bowl over a pan of hot water and then spread over the cake. When chocolate sets cut the cake into squares and serve.
