  • 1tbsp flour
  • 2 1/2 cups flour
  • 2 tsp baking powder
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp dry mustard
  • 1/4 tsp ground cloves
  • 1/2 cup water
  • 1/2 cup plain low-fat yogurt
  • 1/4 cup molasses
  • 1 1/2 cup tsp instant coffee granules
  • 1/4 cup butter, soft
  • 3/4 cup packed brown sugar
  • 2 tsp grated peeled fresh ginger
  • 1 egg
  • 1 egg white

Preheat oven to 350F. Coat 9 X 5 inch loaf pan with cooking spray and dust with flour.

Mix 2 1/2 cup flour, baking powder, ginger, cinnamon, salt, baking soda, pepper, dry mustard and cloves.

Combine 1/2 cup water, yogurt, molasses and coffee granules, mix.

Cream butter in a seperate bowl until smooth. Add sugar, ginger, egg, egg white, beating well. At a low speed add flour mixture.

Put batter into pans and bake at 350F for 40 minutes or until toothpick comes out clean. Cool 10 minutes in the pan on a wire rack. Remoce from the pan and cool completely on wire rack.
